The snap of a tart green apple adds a pleasant note to a creamy coleslaw. It can be made a day ahead, but stir well and adjust the seasoning before serving.
1 small green cabbage
3 Granny Smith apples, peeled if desired
1 carton (8 oz) sour cream
2 tablespoons cider vinegar
1 tablespoon minced fresh parsley
1 teaspoon caraway seeds
½ teaspoon each: salt, freshly ground pepper
1. Core cabbage and grate coarsely. Use about 5 cups in a large bowl. Shred apples and add to bowl.
2. Add remaining ingredients and mix well. Cover and chill 2-3 hours or overnight before serving.
